Homemade Vanilla Ice Cream with Caramel Glaze Recipe

  • Total Time: 50 minutes

Instructions

  • Heat the heavy cream, milk, 3/4 cup granulated sugar, vanilla extract, and salt in a medium saucepan over medium heat until it begins to steam.
  • In a separate bowl, whisk together the egg yolks until smooth.
  • Whisk constantly as you slowly pour the hot cream mixture into the egg yolks.
  • Return the mixture to the saucepan and cook, stirring constantly, for 8-10 minutes, or until the mixture thickens enough to coat the back of a spoon.
  • Do not bring to a boil.
  • Remove from the heat and set aside to cool.
  • Cover and chill in the refrigerator for at least 2 hours or overnight.
  • In a saucepan over medium heat, combine 1/2 cup granulated sugar and 1/4 cup water to make the caramel glaze.
  • Cook until the sugar dissolves, stirring occasionally.
  • Increase the heat to high and cook without stirring for 8-10 minutes, or until the mixture turns amber in color.
  • Remove from the heat and stir in 1/2 cup heavy cream and 2 tablespoons unsalted butter.
  • Stir until completely smooth.
  • Allow the caramel to reach room temperature.
  • In an ice cream maker, churn the chilled ice cream mixture according to the manufacturer's instructions until it reaches a soft-serve consistency.
  • Fill a freezer-safe container halfway with ice cream and drizzle with the cooled caramel glaze.
  • Swirl the caramel into the ice cream with a knife.
  • Cover and place in the freezer for 4 hours or overnight.
