Ingredients

• 1 cup whole milk
• 1 teaspoon vanilla extract
• 1/4 tsp salt
• 1/2 cup cocoa powder (unsweetened)
• 4 egg yolks
• 3/4 cup granulated sugar
• 2 cups heavy cream

Instructions

• Over medium heat, whisk together heavy cream, whole milk, granulated sugar, cocoa powder, and salt in a medium saucepan.
• Whisk egg yolks in a separate bowl until they are lighter in color and frothy.
• Pour a cup of the hot cream mixture slowly into the egg yolks, whisking constantly to temper the yolks and prevent curdling.
• Return the egg yolk mixture to the saucepan with the remaining cream mixture and cook, stirring constantly, over medium heat until the mixture thickens and coats the back of a spoon.
• Remove from the heat and add the vanilla extract.
• Pour the mixture through a fine-mesh sieve into a clean container, cover with plastic wrap, and chill for at least 2 hours or overnight.
• Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's directions.
• Transfer the churned ice cream to a container and freeze for 2-3 hours, or until firm.
